Gelatin
Description
Gelatin is a translucent, colorless, tasteless ingredient, usually derived from collagen obtained from animal body parts. It is a gelling agent used to solidify liquid culture medium.
This product is white or light yellow, transparent to translucent, glossy brittle flakes or powder particles, almost odorless and tasteless.
This product is soluble in hot water, organic acids such as acetic acid, salicylic acid and phthalic acid, as well as urea, thiourea, thiocyanate, high concentration potassium bromide or potassium iodide solution; insoluble in cold water, and insoluble in organic solvents such as ether, ethanol or chloroform.
Industrial gelatin is a hydrophilic colloid with the function of protective colloid, which can be used as a stabilizer and emulsifier for hydrophobic colloids. It is also a multifunctional dispersant, binder, thickener, stabilizer and emulsifier.
Edible gelatin can absorb 5-10 times its weight in water. When heated, it enters a sol state; when cooled, it enters a gel state. Due to this special property, it is commonly used in the candy industry.
